Redefine Meat
Israeli food-technology firm founded in 2018 that uses proprietary 3D printing to make plant-based meat alternatives sold across Europe.
Redefine Meat is an Israeli food-technology company founded in 2018 and headquartered in Rehovot, which develops plant-based meat alternatives marketed as "New Meat". The company's central technology is Meat Matrix Additive Manufacturing (MMAM), a proprietary 3D-printing process it uses to construct plant-based protein structures intended to replicate the flavour, texture and versatility of animal-based meat. Its technical work spans additive manufacturing, plant-based protein formulation, materials science and sensory and texture engineering.
The R&D organisation comprises more than 80 scientists and engineers, including 12 PhDs working across 10 scientific disciplines. The company was founded by entrepreneurs Eshchar Ben-Shitrit and Adam Lahav and describes its culture as science-driven, with proprietary manufacturing technology developed in-house.
The product range covers Beef Mince, Flank Steak, Lamb Kofta Mix, Premium Burgers, Pulled Beef, Pulled Pork and Shawarma. Products are formulated with non-GMO ingredients and contain no animal-based ingredients or by-products, and the company states that they have won awards. Redefine Meat sells through major retailers across Europe, including Tesco in the United Kingdom and Ocado, and operates in Israel, Europe and the UK.
